‘Sour cream’ without cream

Sour cream salad dressing, creamy sauce or cream base … There are many dishes we can hardly imagine without cream. But it is possible. Try this trick to avoid animal-based fats and still preserve the velvety texture of the dish. Whip up a salad topping with ground cashew nuts in place of cream.

Ingredients:

  • 1 cup cashew nuts (raw and unsalted) 
  • ¼ tsp salt
  • 1-2 tsp of apple cider vinegar
  • juice of a small lemon

Preparation:

Mix the ingredients in a blender and cool the sauce before serving.

Dairy-free ice cream

A summer without ice cream? No, thank you! Even if you are diligently sticking to the principles of vegan nutrition, it is difficult to simply strike the most popular dessert off the menu. But the good news is, you don’t have to. You only need to prepare it a little differently – based on frozen bananas. 

Ingredients:

  • 3 bananas, chopped and frozen
  • 1/3 cup plant milk (for example, rice or almond milk)
  • ½ tsp vanilla extract
  • 2 tbsp cocoa powder

Preparation:

Mix pieces of frozen bananas and other ingredients in a blender. If you want, you can change the flavour of the ice cream and use fruit instead of cocoa.

Gluten-free vegan pastry dough

Sweet pies, savoury pies, oversized pies, mini pies, upside-down pies … There are countless ways of preparing them, with fillings tailored to personal tastes and purposes, but making one while trying to avoid animal proteins and gluten can be a challenge. The following tip can simplify your baking experience considerably. Your only task is to figure out the filling.

Ingredients:

  • ¾ cup rice flour
  • ½ cup almond powder
  • 3 tbsp corn starch
  • 2 tbsp yeast 
  • ½ tsp ground flax seeds
  • ½ tsp  salt
  • 5 tbsp vegetable butter (for example, coconut butter)
  • 3 tbsp cold water

Preparation:

Mix together all the ingredients, gradually adding the fat. Knead well and put the dough in the refrigerator for half an hour. Then spread it evenly on a pie pan, add the filling and bake it.

Whipped cream from chickpeas

Cakes, ice creams, fruit cups … And a cloud of cream on top. If you’re not completely into a vegan diet, this has got to have awakened your taste buds. But if you swear by animal-protein free nutrition, we are happy to let you know you can still enjoy whipped cream. Use this simple trick to put the final touch of sweetness on your vegan desserts.

Ingredients:

  • 2 cups leftover liquid from canned chickpeas
  • 2 tsp vanilla extract
  • 1 cup sugar

Preparation:

Whip together the ingredients into a fluffy cream and cool.
